Top 5 tips and tricks

Although this recipe is incredibly easy to make, a few simple tips can help you achieve even better results.

  1. Sear the chicken first. Instead of adding the chicken directly to the broth, sear it in olive oil first. This develops a wonderful aroma and creates a richer, deeper flavor. Be careful not to overcrowd the pot, as the chicken will steam rather than brown.
  2. Don't overcook the gnocchi. Potato gnocchi only need a few minutes to cook. If left in the simmering soup for too long, they can become too soft and start to fall apart. Add them toward the end of cooking and keep an eye on them to ensure they hold their shape.
  3. Use good quality sun-dried tomatoes. Sun-dried tomatoes are one of the key ingredients in this recipe. Choose soft, flavorful sun-dried tomatoes packed in oil, as they give the soup its signature slightly sweet and tangy flavor. For extra richness, you can also use a teaspoon of the oil from the jar when sautéing the vegetables.
  4. Add heavy cream toward the end. For a beautifully smooth and silky texture, add the heavy cream when the gnocchi are almost cooked. Reduce the heat and allow the soup to simmer gently. This helps prevent the creamy broth from separating.
  5. Adjust the consistency to your liking. As the gnocchi cook, they release some starch, naturally thickening the soup. If you prefer a thinner consistency, simply add a little extra hot chicken broth. For a thicker, creamier soup, use slightly less liquid. Keep in mind that the soup will continue to thicken as it cools.

Storing and reheating

Creamy Chicken Gnocchi Soup tastes best on the day it is made. However, you can also store it and enjoy it over the next day or two.

Storing in the refrigerator: Allow the soup to cool quickly after cooking and transfer it to an airtight container within two hours. Store it in the refrigerator for up to 3 days. Keep in mind that the gnocchi will absorb some of the liquid as the soup sits, so it will become slightly thicker the next day.

Reheating: Transfer the soup to a saucepan, add a few tablespoons of water or chicken broth, and gently reheat over medium-low heat, stirring occasionally, until piping hot. Avoid boiling the soup vigorously for too long, as the gnocchi may become too soft and fall apart.

METHOD

  • season the meat

Cut the chicken breast into small cubes. Place in a bowl and season with salt and pepper.

  • sear the meat

Place a large, deep skillet over medium heat. Add the olive oil and chicken, and cook for about 5 minutes, or until golden brown. Transfer the chicken to a plate.

Add the finely chopped onion and sliced sun-dried tomatoes to the same skillet. Sauté for 2–3 minutes. Add the minced garlic and tomato paste, and cook for another 2 minutes. Pour in the chicken broth, then add the ground paprika, oregano, salt, and pepper. Cook for another minute, stirring occasionally.

  • add the heavy cream

Pour in the heavy cream, stir, and bring the soup to a gentle simmer.

  • add the gnocchi and chicken

Add the potato gnocchi and the seared chicken, along with any juices from the plate. Simmer gently for 5–7 minutes, or until the gnocchi are tender and the chicken is fully cooked through.
